每年夏至到大暑,正正是大嶼山吃冬瓜的季節。當經過白銀鄉下的「草原農場」,總會看到棚架上掛了幾十隻巨型青皮大冬瓜,每隻平均都有三十斤重。農夫強哥在這裡默默耕耘了五、六個年頭,每一隻懸掛藤間的冬瓜,都是經歷了一百二十個日與夜的心血結晶。
青皮大冬瓜曾是香港昔日常見的作物之一,為了保留這份純粹的香港味道,強哥特意將葉子盛先生所分享家族的種子,由坪輋帶入大嶼山。它清甜細膩、瓜肉結實,曾是本地酒樓冬瓜宴的靈魂。從外面來到島上扎根的種子,就這樣延續了本土農業的生命力。
每逢冬瓜豐收,正好讓社區發揮「看家本事」:在貝澳生活的年輕人 Juno、Wendy 和 Kelvin,揉捏出傳承南大嶼客家溫度的冬瓜茶粿;「好老土」學徒則落田幫手,把冬瓜轉化為滋潤入屋的湯包。大家因為一隻冬瓜結緣,用各自的手藝與農夫同行,炮製出「島嶼風味」。
今年夏天,「好老土」聯同梅窩「草原農場」及貝澳「金屋藏嬌・茶粿子」,推出第二期【一期一嶼】禮盒《 桂香蘊玉 》,結合農夫的堅韌、茶粿職人的手藝,以及學徒們的心意。我們希望透過這份滿載在地生命力的禮盒,讓更多人認識這個香港本地原生種——「青皮大冬瓜」。
農|梅窩白銀鄉的青皮大冬瓜
草原農場由退休返鄉的強哥打理。他在梅窩白銀鄉繼續種植香港新界傳統的青皮大冬瓜品種。這個曾經常見的傳統作物,近年因市場及成本變化,本地種植逐漸減少。強哥種植冬瓜,並非單純追求”搵食”,而是希望這個地方品種能在本地土壤繼續存活下去。
社|一隻冬瓜的轉化 讓本地品種延續下去
一隻三十斤的大冬瓜,現代家庭難以一次用完。草原農場推出「青皮大冬瓜湯料包」,源自好老土「有種大嶼」學徒計劃的延續。學徒跟隨強哥學習種植後,將大冬瓜配合易保存、易烹煮的湯料,配以香城遺菇的豪菇,濃縮成一碗清甜消暑的家常冬瓜湯。簡單熬煮,即可品嚐整個夏天的耕作成果,以及學徒與農夫共同付出的努力。

傳|把大冬瓜的清甜包進茶粿裡
貝澳「金屋藏嬌・茶粿子」來自大嶼山客家家族,傳承90歲嫲嫲的手作技藝,將傳統茶粿與本地農產結合。「金桂冬瓜茶粿」作為其品牌最著名和特色的產品,以本地大冬瓜入饌,柔軟糯香的外皮,包裹着冬瓜慢熬後的清甜,以茶粿延續鄉郊節氣與分享的傳統。
創|讓小孩子也吃的香港冬瓜
來自元朗的「土炮日常」專注手工烘焙,視製作食物為沉澱日常的方式。今次她們以傳統老婆餅為靈感,重新演繹冬瓜在糕點中的角色。將青皮大冬瓜原有的清甜特質,轉化為新鮮冬瓜汁揉入傳統餡料,製作帶有煙韌口感的「冬瓜麻糬酥」,平衡酥餅的油膩感,讓小孩子也會愛上香港冬瓜。希望透過分享每件烘焙成品,傳遞手作食物的實在溫度,保持對生活的好奇與期待。
一隻隻青皮大冬瓜,裡面裝載著強哥由留種、壓蔓、搭棚,再到耐心等待收成的無數個日與夜。它揉合了茶粿職人的巧思,將同一份農產變奏出截然不同的風味;當中更夾雜了年輕學徒在田間流過的汗水,他們一步一腳印,慢慢摸索出人、土地與食物之間的深厚連繫。

Every summer, Mui Wo celebrates its winter melon season at Grassland Farm. Beneath Lotus Hill, farmer Keung quietly tends the land, nurturing heritage green-skinned winter melons that grow up to 40 pounds. Raised from heirloom seeds brought from Ping Che to preserve Hong Kong’s agricultural legacy, these melons mature over 120 days to offer a delicate, cooling sweetness.
For Lantau residents, this harvest is the centerpiece of a shared summer feast. In Pui O, young locals weave Hakka traditions into winter melon Cha Kwo tea cakes, while apprentices from Good Old Soil craft nourishing soup packs. Everyone brings their own craft to the table, transforming the same crop into distinct family recipes.
This summer, Good Old Soil partners with 4 local craftsmen to present the "Osmanthus and Jade" gift box, sharing the vitality of the local land and the rich community spirit of this island flavor.
Farmers | Mui Wo Pak Ngau Sheung Green-Skinned Winter Melon
Grassland Farm is tended by Mr. Keung, who returned to Mui Wo Pak Ngau Sheung to continue growing the traditional New Territories green-skinned winter melon seeding for over six years. Once a common crop and classic ingredient for winter melon soup, its local cultivation has declined due to market and cost changes. Mr. Keung grows these melons not for high yield, but to keep this traditional Hong Kong seeding alive in local soil.
Community | Keeping the Local Seeding Alive
A 40-pound winter melon is too large for a modern family to finish at once. Grassland Farm has created the “Green-Skinned Winter Melon Soup Pack”, continuing the Made-in-Lantau Apprentice Program. After learning cultivation from Mr. Keung, the apprentices processed it into an easy-to-store, easy-to-cook soup pack blended with local ingredients. A simple boil lets you taste the fruits of the whole season and the shared effort of apprentices and farmers.

Tradition | Wrapping the Melon’s Sweetness into Hakka Tea Cake
Hailing from a Hakka family on South Lantau Island, Pui O Sugar Granny inherited her grandmother’s artisanal, handmade skills, beautifully combining traditional Hakka tea cake (Cha Kwo) with local produce.
As a signature product of their brand, the "Golden Osmanthus Winter Melon Tea Cake" features a locally sourced winter melon filling. Its soft, chewy skin wraps around a slow-cooked, delicate sweetness, carrying on the rural tradition of sharing.
Creativity | Making Hong Kong Winter Melon a Treat for Kids
Hailing from Yuen Long, "Formless Diary" (土炮日常) focuses on handmade baking, viewing the process of making food as a way to settle and ground daily life. This time, inspired by the traditional Wife Cake, they have reimagined the role of winter melon in pastries. By capturing the natural, refreshing sweetness of the green-skinned giant winter melon, they infuse fresh winter melon juice into a traditional filling to create the "Winter Melon Mochi Pastry." Featuring a delightfully chewy texture, it perfectly balances the richness of the pastry, making even children fall in love with Hong Kong winter melon.
Through sharing each piece of baked goodness, they hope to pass on the genuine warmth of handmade food, while maintaining a sense of curiosity and anticipation for life.
A single winter melon represents countless hours of Mr. Keung’s devotion—saving seeds, training vines, building trellises, and waiting patiently for the harvest. It reflects the ingenuity of youth villagers who reimagine the same crop in entirely different ways. And it captures the journey of young apprentices learning to connect with the land that sustains them.
