「好老土」再次聯乘 麥子釀酒廠，配合 香港蒸餾所 的蒸餾技術，以梅窩何氏果園逾70年樹齡的雞心黃皮為主角，釀製成一支 《爽皮 WAMPEE GOSE》 手工啤酒。

何氏果園的雞心黃皮糖度高達20度，經過兩代農人的種植與改良，果肉厚實、清甜，少了傳統黃皮的酸澀感。

我們希望帶來的不只是一支「只有黃皮味」的啤酒，而是讓黃皮與啤酒本身的風味互相配合。

今年的爽皮，風味比上一年溫和。黃皮果香輕盈，酸、鹹感收斂，入口清爽，尾段留下一點柑橘果皮般的回甘與微苦。

而這一粒黃皮，亦得來不易。六、七月連場大雨、提早收成、果蝠搶食，我們趕在天黑前上山搶收，再一箱一箱靠人手將黃皮搬下山。收成之後，麥子酒廠與香港蒸餾所再一起研究黃皮的處理方法，讓這批小造的本地果，繼續走進另一段旅程。

“Good Old Soil” is once again teaming up with Mak’s Brewery, together with Hong Kong Distillery’s distillation techniques, to create WAMPEE GOSE — a craft beer featuring chicken-heart wampee grown at Ho’s Orchard in Mui Wo, where some of the trees are over 70 years old.

With a sugar content of up to 20 Brix, Ho’s Orchard’s chicken-heart wampee has been grown and refined by two generations of local farmers. The fruit has thick, juicy flesh with a naturally sweet flavour and less of the sharp astringency traditionally associated with wampee.

We wanted to create more than a beer that simply “tastes like wampee”. Instead, we wanted the wampee to complement the flavours of the beer itself.

This year’s WAMPEE GOSE is gentler than last year’s. The wampee aroma is light and delicate, with more restrained sour and salty notes. It is refreshing on the palate, followed by a subtle citrus-peel sweetness and a gentle bitterness at the finish.

The wampee may be the same every year,
but every harvest carries a different sense of place — and brings a different flavour to the brew. 𓂃

And this batch of wampee was not easy to come by.

Heavy rain throughout June and July, an early harvest, and fruit bats competing for the crop all made this year’s harvest a race against time. We headed up the mountain before dark to gather the fruit, then carried box after box down by hand.

After the harvest, Mak’s Brewery and Hong Kong Distillery worked together to explore new ways of processing the wampee, giving this year’s smaller harvest of local fruit a chance to continue its journey in another form.
